負責於中式餐廳烹調菜式；預備食材；調配麵粉；製作各種麵條;煮麵及烹調湯底；採購食材，監控食材庫存；編訂餐單和設計菜式；監控食物品質及環境衛生；安排人手調配及培訓員工；管理廚房之運作；在上什及二廚督導下協助其他廚務;督導四廚或以下廚師
